Mixture
55g (4oz) Butter
2 Eggs
110g (4oz) Caster sugar
110g (4oz) Plain flour
2 Teaspoons of Baking Powder
1-2 Bananas
A bag Of Chocolate Chips
Butter Icing
1 Teaspoon of Vanilla Extract
55g ( 2oz) Butter
110g (4oz) Icing Sugar
Pre Heat Oven to 180 C / Fan 160. Mix the Butter and Sugar until fluffy, then gradually beat in the eggs until the mixture is smooth. Fold in the Flour, Baking Powder, bananas until the mixture is smooth. Then go ahead and add as many Chocolate chips as you would like ( I only put 1 Banana in but its up to you how many you would like). Divide Mixture between cases, I made them quite full and filled up 8 cases, then cook for 20 minutes.
While your waiting for your cakes to cool down you can make the icing. Whisk the Icing Sugar, Butter and Vanilla Extract together until a smooth creamy mixture. If you have a piping bag thats even better, Im hoping to get one soon as with a spoon it doesn't look all that great. Then go ahead and decorate. Then your ready to eat.
I can't believe how big they turned out, definitely glad I put loads of mixture in each case hehe, they taste so lovely aswell. Im pretty impressed with my first attempt.

DeleteThese look so tasty! I love baking and you've definitely got me drooling at these muffins. I'll have to give this a try, but I may try mix up the recipe by replacing the flour with coconut flour! Oh and you can never have tooo much mixture in the cases haha- the bigger the better!
